Description

A simple and nutritious bottle gourd curry recipe, packed with hydrating benefits, rich in vitamins, and easy to prepare with minimal ingredients. Perfect for a healthy meal


Ingredients

  • 2 medium-sized bottle gourd, cut into 3-inch pieces
  • 2 tsps cumin powder
  • 1 tsp turmeric powder
  • 2 green chills, chopped
  • 1 large white or yellow onion, chopped
  • 2 medium tomatoes, chopped
  • 1/2 cup water (to be used sparingly)
  • 1/2 cup yogurt
  • salt and black pepper powder to taste
  • 2 tbsp cooking oil or ghee
  • a handful of chopped cilantro for garnish

Instructions

  1. Sautee onions in cooking oil or ghee until golden brown – about 1-2 minutes.
  2. Add chopped tomatoes and cook while stirring until broken down and has turned into a s smooth paste.
  3. Add cumin and turmeric powders and continue to cook until fragrant. Mix in yogurt.
  4. Add bottle gourd pieces. Turn until completely mixed.
  5. Cover the pot with a lid, lower the heat to medium, and simmer until bottle gourd pieces are tender. Add half a cup water as necessary. Cooking time varies depending on the texture of the gourd.
  6. Season with salt and black pepper and cook for another minute.
  7. Garnish with fresh chopped cilantro/coriander leaves and serve.
