- 2 medium-sized bottle gourd, cut into 3-inch pieces
- 2 tsps cumin powder
- 1 tsp turmeric powder
- 2 green chills, chopped
- 1 large white or yellow onion, chopped
- 2 medium tomatoes, chopped
- 1/2 cup water (to be used sparingly)
- 1/2 cup yogurt
- salt and black pepper powder to taste
- 2 tbsp cooking oil or ghee
- a handful of chopped cilantro for garnish
Instructions
- Sautee onions in cooking oil or ghee until golden brown – about 1-2 minutes.
- Add chopped tomatoes and cook while stirring until broken down and has turned into a s smooth paste.
- Add cumin and turmeric powders and continue to cook until fragrant. Mix in yogurt.
- Add bottle gourd pieces. Turn until completely mixed.
- Cover the pot with a lid, lower the heat to medium, and simmer until bottle gourd pieces are tender. Add half a cup water as necessary. Cooking time varies depending on the texture of the gourd.
- Season with salt and black pepper and cook for another minute.
- Garnish with fresh chopped cilantro/coriander leaves and serve.
