Description

This sautéed okra and tomato is a simple dish that is a perfect blend of savory and tangy flavors, ideal for a healthy, quick meal.


Ingredients

  • 500 grams fresh okra
  • 2 cups fresh tomatoes, diced
  • 2 tablespoons olive oil or vegetable oil
  • 3 cloves garlic, minced
  • 1 medium size sweet onion, chopped
  • 1 tablespoon tomato paste
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon wine vinegar (optional)

Instructions

  1. Heat oil over medium-high heat in a skillet. Sauté garlic until fragrant, about 30 seconds, then add onions and cook for another 2 minutes or until the onions are limp.
  2. Add chopped tomatoes, reduce the heat to medium, and continue to cook stirring until the tomatoes are broken down.
  3. Add okra and cook for 5 minutes, stirring occasionally until the okra softens slightly. If you pre-boiled your okra, reduce the cooking process to 1-2 minutes. Same if you are using frozen okra. Otherwise, you can add the wine vinegar at this stage.
  4. Stir in the tomato paste and season with salt and ground black pepper. Mix well until everything is evenly coated.
  5. Serve warm as a side dish or a light main course. Enjoy!
