- 3 heads of cauliflower
- ¼ cup butter (or as you prefer)
Instructions
- Wash the cauliflower then dry using paper towel. Grate using the regular grater or food processor. You may want to dry the grated cauliflower a little bit more at this stage.
- Heat a pan or casserole and melt butter over medium heat.
- Add grated cauliflower and stir until well-covered by butter. Continue to stir for no more than 5 minutes.
- Serve as rice!
Notes
Tips:
Use the medium holes of the grater. The small holes will make the cauliflower too fine and will result in mushy rice, err, cauliflower rice.
If using food processor, grate only for no more than a couple of rounds.
Do not overcook.
