Description
A zesty green onion and corn salad with additional choice vegetables and lemon juice dressing. A delightful and easy-to-make dish bursting with taste.
Ingredients
Scale
- 1 cup canned sweet corn (drained)
- 1 medium-sized cucumber (diced)
- ½ carrot (shredded)
- 1 large tomato (diced)
- 1 small green bell pepper (diced)
- 2 bunches of green onions (cut up)
- ½ cup parsley (chopped)
For the dressing
- Juice of half a lemon
- 4 tbsp olive oil
- 1/8 tsp salt
- 1/8 tsp black pepper
- 1/8 tsp sugar (optional)
Instructions
- Mix all salad ingredients except chopped parsley..
- Add dressing, if using. Mix further by a few turns.
- Sprinkle with chopped parsley.
Notes
Salad is ready after mixing. If you are using the dressing, it is best to sprinkle it about 5 minutes before serving.
