Never-ending declaration for love of anything green, anything salad

I have a declaration for addiction to anything green in my post “green salad.” This one might be a good continuation for it, but this is more colorful, definitely not on the green side. Think this is more attractive, ha-ha!  Colors!!

Creativity is the mother of this salad

I did not have a name for this salad!  But I titled this recipe “green onion and corn salad” because despite the presence of other ingredients, these two items are the ones that give character to the taste of this concoction.  Already good without any dressing, but olive-oil and lemon give it a nice twist in the taste buds.

How to make green onion salad

This salad was very easy.  A day before my next trip to the supermarket, I took all the last remaining pieces of salad items from the fridge and started from there. There was no lettuce, no problem; I only had one each of carrot, cucumber, green bell pepper and tomato, no problem at all.  So, I took some young onions and a can of corn.  Presto!

What other ingredients can we add to this salad

That was a good question I asked myself after I finished my portion. Obviously liking it (which one did I not like?), I did it another time and added kidney beans; another time, I added chopped fresh oregano leaves and whew! Think about other beans like garbanzos and white beans and this would also be nice.

Forget about the salad addict that I am, because I am unreliable when it comes to anything salad (and anything spicy), but trust me, you would love this.

Corn and Green Onion Salad

Ingredients

Scale
  • 1 cup canned sweet corn (drained)
  • 1 medium-sized cucumber (diced)
  • ½ carrot (shredded)
  • 1 large tomato (diced)
  • 1 small green bell pepper (diced)
  • 2 bunches of green onions (cut up)
  • ½ cup parsley (chopped)

For the dressing

  • Juice of half a lemon
  • 4 tbsp olive oil
  • 1/8 tsp salt
  • 1/8 tsp black pepper
  • 1/8 tsp sugar (optional)

Instructions

  1. Mix all salad ingredients except chopped parsley..
  2. Add dressing, if using. Mix further by a few turns.
  3. Sprinkle with chopped parsley.

Notes

Salad is ready after mixing. If you are using the dressing, it is best to sprinkle it about 5 minutes before serving.
