This vegetable and barley soup has easy ingredients and instructions, but remains to be a healthy choice.
Ingredients

- 1 yellow or white onion
- 2 cloves garlic
- 2 tbsp oil (preferably, olive oil)
- 1–2 carrots, diced
- 1 small potato, diced
- 1 green beans, cut finely
- 1/4 cup broccoli florets
- 1/4 cup cauliflower florets
- 1 cup pearl barley
- 1 tsp herbs (dried oregano, basil, etc.)
- Salt and ground black pepper, to taste
- 4 cups broth
- fresh parsley for garnishing (optional)
Instructions
- In a large casserole, sautee garlic and onion in oil for about 5 minutes. Tip: when the onion is translucent, you have achieved the sauteeing result.
- Add the vegetables and herbs and stir for another 2 minutes, then add broth. Let boil while stirring occasionally.
- Lower the heat and continue to simmer until the vegetables are soft. Add barley, salt and black pepper. Stir once and turn the heat off.
- Serve while hot. Garnish with parsley, if using.
