This vegetable and barley soup has easy ingredients and instructions, but remains to be a healthy choice.


  • 1 yellow or white onion
  • 2 cloves garlic
  • 2 tbsp oil (preferably, olive oil)
  • 12 carrots, diced
  • 1 small potato, diced
  • 1 green beans, cut finely
  • 1/4 cup broccoli florets
  • 1/4 cup cauliflower florets
  • 1 cup pearl barley
  • 1 tsp herbs (dried oregano, basil, etc.)
  • Salt and ground black pepper, to taste
  • 4 cups broth
  • fresh parsley for garnishing (optional)


  1. In a large casserole, sautee garlic and onion in oil for about 5 minutes. Tip: when the onion is translucent, you have achieved the sauteeing result.
  2. Add the vegetables and herbs and stir for another 2 minutes, then add broth. Let boil while stirring occasionally.
  3. Lower the heat and continue to simmer until the vegetables are soft. Add barley, salt and black pepper. Stir once and turn the heat off.
  4. Serve while hot. Garnish with parsley, if using.
